Les Délices de Maï was born from a radical career change: that of an industrial chemist who turned her back on petroleum products to put her knowledge at the service of what is best — an honest artisanal biscuit factory, located in Bollène, Provence. My scientific background is not a marketing ploy. This is a daily reality in my workshop: I know how to reduce the sugar content of a recipe without altering its texture, how to identify supposedly "healthy" ingredients that are not, and how to choose my packaging knowing its true environmental footprint — not the one displayed on the supplier's packaging. The result: products that say what they are, with French ingredients from our sustainable agriculture, without additives or preservatives, without glucose syrup or palm oil.
